South Tyrolean Speck is a true speciality and for many it is inextricably linked to South Tyrol: its flavour is sweeter, more delicate and balanced than that of northern hams, but at the same time more intense and spicy than that of raw hams from the Mediterranean area. The secret lies in the traditional production process and the long curing period of at least 22 weeks in the pure mountain air.
